GREEK RICE – GREEK LEMON RICE RECIPE

INGREDIENTS

  • 2 cups of white rice ( uncooked and preferably long grain)
  • 3 tablespoon of extra virgin olive oil
  • 2 cups of low sodium broth (chicken or vegetable broth will work)
  • 1 cup of finely chopped onions (medium yellow onion)
  • 6 tablespoons of lemon juice and 1 tablespoon lemon zest
  • Half a cup of orzo pasta 
  • 1 pinch each of black pepper and sea salt 
  • 2 minced garlic cloves 
  • A large handful of freshly chopped parsley
  • 1 teaspoon of dill herb, dried

INSTRUCTIONS 

  1. Rice should be thoroughly washed before being soaked for 15 to 20 minutes in enough cold water to cover the rice by an inch.

To know if it’s ready, Place a grain of rice between your thumb and index finger, and you should be able to break it with ease. Drain thoroughly.

    2. Over medium heat, place a large sauce pan then add 3 tablespoons of extra virgin olive oil. Heat until shimmering but not smoking.

   3. Add the onions and sauté them until they are translucent or for 3 to 4 minutes. Pour in orzo pasta and garlic.Toss for a while till the orzo turns a shade

    4. Stir in the rice. Coat with a toss.

    5. Add the broth, lemon juice, pepper and salt.. Reduce heat after bringing the liquid to a rolling boil. 

When the rice is done, cover and continue to simmer for around 20 minutes (liquid should be fully absorbed and rice should be tender but not sticky.)

     6. Take the rice off the heat. For best results, cover the rice and don’t touch it for about 10 minutes; this helps maintain the rice’s consistency and integrity.

      7. Remove the lid and mix in the lemon zest, dill, and parsley.

     8. If you like, you can top with a few slices of lemon for garnish.

      9. Enjoy!

COOKING TIPS FOR YOUR GREEK RICE 

Rice should be thoroughly washed and soaked to remove extra starch that makes rice sticky (Greek rice or Greek Lemon Rice is not meant to be sticky). Soaking the rice reduces cooking time and ensures that the interior of the grain really cooks before the exterior starts to lose its shape.
